Cooking Time – 30-40 minutes

Ingredient –
- Vegetables such as Potato, Kumara, Carrot, Cauliflower and Green Peas etc. You can add or use just chicken or fish if you like. Quantity of Half kg of vegetables or meat. *You can also cook combination of vegetables and meat together. In this case yo u can take 60% vegetables and 40% meat. Make sure while cooking, you put meat before vegetable because meat will take longer time to cook.
- One big onion, 4-5 pods of garlic, small quantity of ginger
- 1 can of chopped tomato or 3-4 fresh red tomatoes
- Cooking Oil to sauté onion, garlic and ginger etc.
- 1 tea spoon of Curry powder, make it 2 tea spoon if you are want bit strong curry or if you are cooking meat.
- Mixed Italian herbs.
- Green coriander leaves for garnishing
Precooking –
- Chop vegetables if you are adding vegetables.
- Chop onions, thin chop or crush garlic and crush ginger.
- Thin chop green coriander.
Cooking –
Use a pot so you can stir easily. Put pot on stove. Put one
table spoon cooking oil. Put crushed or chopped garlic when oil is hot. Keep
stirring till garlic becomes little golden brown. Now add chopped onion keep stirring
till onion also become little golden brown. Now you can add crushed ginger stir
for one minute. Add curry powder;
quickly stir for 4-5 seconds. Add chopped tomatoes and mixed it nicely. Now you
can add 1 and half tea spoon salt or as per your taste. Add your vegetable or meat and add water to
make curry. Mix a quarter tea spoon of mixed Italian herbs. Put the lid on, Cook it for 10-15 minutes. Make sure vegetable or
meat is cooked.
Once cooked, put chopped green coriander on top of the curry
for garnishing.
Your curry is ready. Serve with boiled rice :)
